Chicken Pho

One of my favorite foods, and easily adaptable for the current RP diet template I’m on is Vietnamese pho.

An aromatic broth accompanied with tender marinated chicken breasts and an assortment of vegetables will make you think twice about your typical “bland” meal prep.


  • Grilled chicken
  • Whole wheat ramen noodles
  • Bean sprouts
  • Jalapeño
  • Scallions
  • Sautéed bok choy
  • Cilantro
  • Sesame oil 

For the broth:

  • Equal parts chicken and turkey stock (6 cups total)
  • Couple pieces of star anise
  • An inch of ginger, sliced thick
  • Scallions
  • Dash of fish sauce
  • Juice and zest from 1 lime

Simmer the broth for about 30 minutes and strain… serve with the other ingredients (or mix and match with what you have on hand)

RP portion (base) – 2 oz. chicken breast; 1 cup sautéed bok choy; 1/2 cup ramen; 1 T sesame oil; 1 cup broth
