Casein Cookies

The casein before bedtime is probably my least favorite time of the day during this RP journey.

I’ve been working on varying options of getting the stuff down besides the boring shake.

There’s recipes for casein cookies all over the interwebs, but many of them are way over my macro intake. However, a fellow Crossfitter posted this recipe on our group page and it’s perfect.

They’re sort of rich – but being someone not keen on desserts anyway, I think most dessert-type meals are rich. Ha, I know. I’m weird.

Ingredients: 

120 g peanut butter

2 and 2/3 scoops casein protein powder

1 cup almond milk

1 tsp cinnamon

Preheat oven to 350 F.

Mix the peanut butter with the protein powder and cinnamon until combined.

Slowly stir in the almond milk until a batter forms.

Divide batter evenly into 8 cookies.

Bake for about 10-15 minutes, then cool to room temperature.

Two cookies have 20 g protein and 12 g fat.
