Chicken + Apple + Basic Vinaigrette

And just like that, the Open is over.

I managed to RX all five – yes, ALL FIVE – workouts this year when my goal was simply just one.

It’s amazing to see yourself progress in this sport. It’s a constant battle of weaknesses and strengths – the ever changing list of “goats”. It’s what I love so much about Crossfit. No one is perfect. Everyone works hard to be their best self, and every ego is checked at the door.

Ingredients:

White Wine Vinaigrette:

1 shallot, diced

2-3 cloves of garlic, minced

1 T Dijon mustard

2 T honey

Juice from 1 lemon

1/4 cup white wine

1 cup olive oil

Salt and pepper

Salad:

Apple, cut into matchsticks

Grilled chicken breast, cubes

Salad greens

Toasted peanuts

White wine vinaigrette  

In a blender, combine all ingredients for the vinaigrette except for the olive oil. With blender running, slowly add olive oil until mixture becomes thickened. Season with salt and pepper.

For the salad, combine a handful of greens, apples, and chicken. Toss with about 2 tablespoons of the vinaigrette and garnish with toasted peanuts

Super simple and tasty salad that is easy to rework with what you have on hand or what you like.
