Broiled Flank Steak + Roasted Broccoli and Potatoes

This is one of those “looks fancy” but is stupid easy kind of recipes. You know, for when you’re too busy, but still want something of substance.

I always prefer a grilled steak to a skillet seared or broiled steak – but when it’s raining outside, you have to use a plan B.

All of this can be done on one sheet pan, after you pre-prep the potatoes – so two pans if you wanna be technical.


1 lb flank steak

1 lb baby potatoes (red, purple, Yukon gold)

1 head of broccoli, cut into florets

3-4 cloves garlic, minced

Olive oil

1 tablespoon cumin

1 tablespoon oregano

1 tablespoon garlic powder

Salt and pepper

Place potatoes in a medium pot of salted water and boil for about 20 to 25 minutes until they start to get tender. Drain.

Preheat oven to high on the Broil setting.

Combine a couple tablespoons of olive oil, minced garlic, cumin, oregano, salt and pepper in a bowl and toss in the broccoli and potatoes to coat well.

Season both sides of the flank steak with garlic powder, salt and pepper.

Spray sheet pan with nonstick spray and arrange the steak, broccoli and potatoes on the pan.

Broil for 4 to 5 minutes, or until steak starts to char on top. Flip and Broil for another 3 to 5 minutes, or until steak is at your desired doneness (this will also depend on how thick your steak is) – but this ended up being a nice medium rare.
