BLT Chicken Salad

When your garden is thriving with tomatoes, you gotta improvise on some classics to make use of them without getting bored.

This comes together quickly and is perfect for those light summer lunches.

Ingredients:

3 chicken breasts, grilled and cubed

1 cup of bacon crumbles

1 packet Ranch seasoning

1/4 cup no fat Greek Yogurt

1/4 cup light mayo

1 cup cherry tomatoes, quartered 

2 tablespoons chives, chopped

1 tablespoon Dijon mustard


Combine all ingredients in a large bowl and mix well.

Serve with toast, salad greens, or fresh fruit.
