Enchilada Stew


Fall and cold weather are in full swing – which means soups and stews are a-plenty around here. I’ve said it before, this probably won’t be the last time I say it – but there is something so gosh darn comforting about a warm bowl of soup.

This enchilada stew has all of the flavors of the great Mexican fare – but with less work and hardly any carbs per serving.

No recipe to list out, as it’s straight out of The Renaissance Feast RP Cookbook – and the only changes I made were the garnishes I used for the finished bowl (queso fresco, tortilla crisps, and cilantro).

If you don’t have it, I’d suggest you go purchase this cookbook right away – as it’s full of many gems that are delicious, yet mindfully healthy.
